Doesn’t ring a bell when you hear “The Blue Banana” :-)? A true fan will know what I’m talking about … it just came into my mind, when I looked at the fluffy banana and blueberries nicecream mix. My new creation turned out to be so delish, creamy, sweet, nourishing and very satisfying. Honestly, it was such a heavenly breakfast treat! Maybe I’m in a kind of dreamland, but I really loved the outcome of this early morning breakfast preparation session.
How to prepare
- 2 tbsp of chia seeds
- 4 tbsp of oats
- some hot boiled water
- 60g plain coconut yogurt
- about 3 tbsp coconut milk
- ½ tsp of cinnamon and pure vanilla powder (according to taste)
- 1 ripe banana (frozen overnight)
- handful of frozen blueberries
- zest of ¼ lemon
- almond butter
- chopped pistachio
- popped quinoa
- self-made oat crumble
Put the frozen banana pieces out of the freezer and let them thaw while you prepare the base. Toss oats and chia seeds together and hardly cover them with boiled hot water, mix well. Add cinnamon, vanilla and coconut yogurt, stir and put aside to soak through.
For the topping, process the frozen banana pieces in a food processor till you get a smooth ice cream consistency. Add the frozen berries and lemon zest and process till it’s combined to a fluffy cream.
Add coconut milk to the base mixture and stir well. Drizzle almond butter over the mixture (or on top for decoration) and pour the “ice cream” over it. Decorate, listo!
